  • ½ teaspoon salt
  • 1¼ cups light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it reaches about ¼ cup; let cool.
  2. Brown the butter over low heat until nutty in aroma; cool slightly.
  3. Whisk together dry ingredients: flour, baking powder, baking soda, cornstarch, spices, and salt.
  4. In a mixing bowl, combine sugars with browned butter; add egg, yolk, reduced cider, and vanilla.
  5. Fold in dry ingredients until just combined; let dough rest while preheating oven to 375°F (190°C).
  6. Scoop dough onto lined baking sheets; bake for 9-11 minutes until edges are set.
  7. Allow cooling before brushing with melted butter and rolling in cinnamon sugar.
