  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed) (for streusel)
  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened) (for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.
  3. Cream softened butter and sugar until fluffy; add eggs one at a time followed by vanilla.
  4. Gradually mix in dry ingredients and milk alternately; fold in diced apples.
  5. Fill muffin cups two-thirds full and sprinkle with streusel topping.
  6. Bake for 22–25 minutes or until a toothpick comes out clean.
  7. Allow cooling before frosting with the cream cheese mixture.
