  • 12 thick-cut slices of brioche bread or 12 brioche rolls, preferably dried out overnight
  • 1 3/4 lb apples of choice, peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 1 1/2 tbsp salted butter
  • 1/4 cup + 3 tbsp granulated sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Optional: 1/2 tsp apple pie spice
  • 4 eggs, at room temperature
  • Optional: turbinado sugar, for topping

Instructions

  1. Preheat oven to 350°F and grease a baking pan.
  2. In a saucepan, melt butter, then stir in flour and apple pie spice before adding brown sugar, diced apples, and water. Cook until apples are soft (10-15 minutes). Strain excess juices and set aside.
  3. In another saucepan over medium-low heat, combine milk, cream, sugar, salt, vanilla extract, cinnamon, and spices until blended; remove from heat.
  4. Whisk in eggs one at a time into the custard mixture.
  5. Cut brioche into cubes and layer in the prepared pan with apple filling.
  6. Pour custard over the bread layers and sprinkle with turbinado sugar if desired.
  7. Bake for 35-40 minutes until golden on top but slightly wobbly in the center.
  8. Cool slightly before serving warm with ice cream or drizzled with reserved apple juices.
