  • 3 pounds boneless chicken thighs
  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups warmed chicken broth
  • Cooked white rice for serving

Instructions

  1. Finely chop the onion, bell peppers, celery, green onions, and parsley. Mince the garlic.
  2. Season the chicken thighs with Cajun seasoning. Heat avocado oil in a skillet over medium-high heat and sear the chicken for about 3-5 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, reduce heat to medium and melt butter. Whisk in flour to form a roux, stirring constantly for about 10-15 minutes until it reaches a medium brown color.
  4. Add chopped vegetables to the roux and sauté for about 10 minutes until softened. Stir in minced garlic and cook for an additional minute.
  5. Gradually whisk in warmed chicken broth until smooth; add seared chicken back to the skillet. Simmer on low heat for about 30 minutes.
  6. Remove chicken, chop into bite-sized pieces, then return to the pot along with chopped parsley.
  7. Serve over cooked white rice topped with green onions.
