  • 34 lbs organic chicken (skin removed)
  • 4 tbsp extra virgin olive oil
  • 1 (14 oz.) can full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 3 garlic cloves (minced)
  • 13 scotch bonnet peppers
  • 2 tbsp Jamaican curry powder
  • 1 cup organic chicken stock (low-sodium)
  • 23 tbsp Jamaican Green Seasoning
  • 2 tbsp organic brown sugar
  • 1 medium bell pepper (chopped)
  • 2 tsps minced fresh ginger
  • 2 green onions (lightly crushed or chopped)
  • 2 fresh thyme sprigs
  • 1 tsp sea salt
  • 1/2 tsp smoked paprika
  • 1 tsp ground allspice
  • sea salt + black pepper (to taste)

Instructions

  1. 1. Marinate chicken with Jamaican Green Seasoning and spices; let sit while preparing other ingredients.
  2. 2. In a large pot, heat olive oil over medium heat, then sauté garlic and ginger until fragrant.
  3. 3. Add marinated chicken to the pot; sear until golden brown on all sides.
  4. 4. Pour in coconut milk and chicken stock; add potatoes, carrots, bell pepper, scotch bonnet peppers, thyme sprigs, brown sugar, and additional spices.
  5. 5. Bring to a boil; then reduce heat to simmer. Cover and cook for about 40 minutes until chicken is tender.
  6. 6. Taste and adjust seasoning if needed before serving over rice or with bread.
