  • 12 oz chicken sausage, sliced
  • 1 cup uncooked orzo pasta
  • 4 cups broccoli florets
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2½ cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken sausage and cook for about 3-4 minutes until browned. Remove from the skillet.
  2. In the same skillet, add another tablespoon of olive oil. Sauté the diced onion for about 2-3 minutes until translucent. Add minced garlic, Italian seasoning, and red pepper flakes; cook for an additional 30 seconds.
  3. Add uncooked orzo to the skillet and toast for 1-2 minutes while stirring occasionally. Pour in chicken broth and bring to a simmer; cover and cook on medium-low heat for about 8 minutes.
  4. Stir in broccoli florets and return the chicken sausage to the skillet. Cover again and cook for another 4-5 minutes until broccoli is tender-crisp.
  5. Off heat, stir in grated Parmesan cheese and fresh lemon juice. Season with salt and black pepper to taste before garnishing with fresh parsley.
