  • 1 cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables (bell peppers, spinach, mushrooms)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a muffin tin.
  2. In a blender, combine eggs, cottage cheese, shredded cheese, milk, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  3. Stir in chopped vegetables and any optional cooked turkey bacon or chicken sausage.
  4. Fill each muffin cup about ¾ full with the mixture.
  5. Bake for 20-25 minutes until set and slightly golden on top.
  6. Allow to cool for 5 minutes before removing from the tin.
