  • Coarse sea salt & freshly ground black pepper
  • 1½ cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour (plus more for dusting)
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher or fine sea salt
  • 2 teaspoons finely chopped fresh rosemary (plus more for topping)

Instructions

  1. Preheat oven to 400°F (204°C) and roast the garlic wrapped in foil with olive oil, salt, and pepper for about 40 minutes until soft.
  2. In a small bowl, dissolve yeast in room-temperature water for 10–15 minutes. In a large bowl, mix flour, kosher salt, oregano, and rosemary.
  3. Combine yeast mixture and smashed roasted garlic into dry ingredients; stir until sticky dough forms.
  4. Cover and let rise at room temperature for about 8–10 hours until doubled in size.
  5. Shape into a ball on a floured surface; place seam-side up in a floured bowl/basket, cover, and refrigerate for 1 hour up to 48 hours.
  6. Preheat oven to 450°F (232°C) with a Dutch oven inside. Score the dough and bake covered for 30 minutes, then uncovered for another 15–20 minutes until golden brown.
  7. Cool on a wire rack before slicing.
