  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • For the glaze: 2 tablespoons honey
  • ½ cup fresh orange juice

Instructions

  1. Rinse and boil the oranges for one hour until soft. Drain and blend until smooth.
  2. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a mixing bowl, combine blended oranges with honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Mix until smooth.
  4. Pour batter into the prepared pan and bake for about one hour or until a toothpick comes out clean.
  5. For the glaze, simmer honey and orange juice in a pot until reduced by half.
  6. Brush the cooled cake with glaze and let it set before serving.
