  • 3/4 cup unsalted butter (softened to room temperature)
  • 3/4 cup brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses (not blackstrap)
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 23 cups icing sugar (sifted)
  • 34 tablespoons eggnog (non-alcoholic)
  • 1/4 teaspoon vanilla extract (alcohol-free, optional)

Instructions

  1. In a large bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
  2. In another bowl, cream softened butter and brown sugar until smooth. Add the egg, egg yolk, vanilla extract, and molasses; mix well.
  3. Gradually combine wet and dry ingredients until just mixed. Cover and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper. Form dough into balls and roll them in sugar before placing them on sheets.
  5. Bake for 8-10 minutes until just set on top; cool on a wire rack.
  6. For frosting, beat softened butter and gradually add icing sugar; stir in eggnog until smooth.
  7. Assemble cookies by spreading frosting between two cooled cookies.
