  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup chopped romaine or mixed greens
  • ½ cup diced tomatoes
  • ¼ cup chopped cilantro
  • ½ cup guacamole (optional)
  • Lime wedges (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, and salt. Spread on a baking sheet and roast for 25-30 minutes.
  2. While roasting, rinse and drain black beans and corn; chop tomatoes and cilantro.
  3. Optional: Mash ripe avocados with salt and lime juice for fresh guacamole.
  4. Assemble by layering greens at the bottom of a bowl, followed by sweet potatoes, beans, corn, tomatoes, and cilantro. Add guacamole in the center.
  5. Squeeze fresh lime juice over the top before serving.
