Ingredients

  • rolled oats
  • all-purpose flour
  • brown sugar
  • unsalted butter, melted
  • baking soda
  • salt
  • fresh lemons, juiced and zested
  • granulated sugar
  • cornstarch
  • water
  • vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix rolled oats, flour, brown sugar, melted butter, baking soda, and salt until combined. Press this mixture into the bottom of the prepared pan to form the crust.
  3. In another bowl, whisk together fresh lemon juice, zest, granulated sugar, cornstarch, water, and vanilla extract until smooth. Pour this lemon filling over the crust.
  4. Sprinkle the reserved oat mixture over the lemon layer evenly.
  5. Bake for about 38 minutes or until golden brown on top. Allow to cool completely before slicing into bars.
