  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • Fresh raspberries for topping

Instructions

  1. In a pot over medium heat, combine water and butter; bring to a boil until melted.
  2. Stir in flour and salt until a smooth dough forms that pulls away from the pot sides.
  3. Remove from heat; let cool slightly before adding eggs one by one, mixing well after each addition.
  4. Pipe small mounds onto lined baking sheets and bake until golden brown; let cool completely.
  5. For the lemon filling, whisk together sugar, cornstarch, milk, egg yolks, lemon juice, and zest over low heat until thickened; let cool before folding in whipped cream.
