  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels (frozen or fresh)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a large bowl. Spread evenly on a baking sheet lined with parchment paper.
  3. Roast the potatoes for 25-30 minutes until golden brown, flipping halfway through.
  4. In a skillet over medium-high heat, cook ground beef (or turkey) until browned. Drain excess fat.
  5. Stir in taco seasoning and water; simmer for 2-3 minutes until thickened.
