  • 1/3 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup jelly or jam (your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth. Stir in peanut butter, sugar, melted butter, vanilla extract, and egg until combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Fold the dry ingredients into the banana mixture until just combined.
  4. Pour half of the batter into the prepared loaf pan. Add dollops of jelly and swirl gently with a knife. Pour remaining batter over jelly layer and repeat with more jelly.
  5. Bake for 50-60 minutes until a toothpick inserted comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
