  • 6 cups Rice Krispies cereal
  • ½ cup unsalted butter
  • 13 ounces mini vegan marshmallows
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • Optional: Orange food coloring and sprinkles for decoration

Instructions

  1. Spray a 9" x 13" baking dish with non-stick spray.
  2. In a large bowl, place the Rice Krispies cereal and set aside.
  3. In a saucepan over low heat, melt the unsalted butter. Add the vegan marshmallows, pumpkin pie spice, vanilla extract, salt, and food coloring (if using). Stir until fully melted.
  4. Remove from heat and mix in the Rice Krispies until well coated.
  5. Press the mixture into the prepared pan gently using a spatula sprayed with non-stick spray.
  6. Allow to cool completely before cutting into squares or fun shapes.
