  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Spread halved cherries on the sheet, sprinkle with sugar, and roast for about 10 minutes until tender. Let cool.
  2. Lower the oven temperature to 325°F. Grease an 8×8 inch pan and line it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In a mixer, beat together granulated sugar, eggs, and egg yolk until fluffy (about 5 minutes).
  5. Gradually add melted butter, oil, and vanilla extract while mixing on low speed.
  6. Gently fold in dry ingredients until just combined.
  7. Fold in half of the roasted cherries and chocolate chips evenly.
  8. Pour batter into the prepared pan and smooth the top. Bake for 40-50 minutes until edges are set but center is slightly underbaked.
  9. Cool completely before slicing and serve topped with remaining roasted cherries.
