  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 6 to 7 cups vegetable broth
  • 2 1/2 cups butternut squash (cut into bite-sized pieces)
  • Salt and pepper (to preference)
  • 1 pound potato gnocchi
  • 1 1/2 cups half-and-half
  • 4 cups kale (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Stir in garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
  3. Add garlic powder, rosemary, thyme, salt, and pepper; mix well.
