1 cup all-purpose flour
1 cup milk
3 large eggs
1/2 tsp salt
vegetable oil or beef drippings (for muffin cups)
Instructions
Preheat your oven to 425°F (220°C) and place a 12-cup muffin tin inside to heat.
In a large mixing bowl, whisk together flour, milk, eggs, and salt until smooth.
Once the oven reaches temperature, carefully remove the muffin tin and add about 1/4 inch of vegetable oil or beef drippings to each cup. Return the tin to the oven for 5 minutes.
Remove the tin again and pour the batter into each cup halfway full.
Bake for 20-25 minutes without opening the oven door until golden brown and puffed.
