  • 1 lb. dried pinto beans
  • 6 strips smoked tempeh or seitan, diced
  • 1 yellow onion, diced
  • 1 jalapeño, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon Mexican oregano
  • 2 bay leaves
  • 24 oz vegetable broth or chicken broth
  • 1 1/2 cups water or additional broth
  • 1 chicken bouillon cube
  • Kosher salt, to taste

Instructions

  1. Soak the pinto beans overnight in a large bowl of water with dissolved salt.
  2. In a Dutch oven, cook the diced smoked tempeh or seitan over medium-low heat until crispy.
  3. Add the diced onion and jalapeño to the pot; sauté until softened.
  4. Stir in minced garlic, ancho chile powder, cumin, and oregano—cook until fragrant.
  5. Add soaked beans, vegetable broth, water, bay leaves, and bouillon cube; season with salt.
  6. Cover and simmer for about 90 minutes until beans are tender and creamy, stirring occasionally.
  7. Remove bay leaves before serving; stir in freshly made pico de gallo.
