  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 cup chopped baby spinach
  • 4 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In oven-safe ramekins or a baking dish, layer cherry tomatoes, diced red bell pepper, red onion, minced garlic, and feta cheese.
  3. Drizzle olive oil over the mixture and sprinkle with dried oregano, sea salt, thyme, black pepper, and red pepper flakes.
  4. Bake for approximately 25 minutes until the vegetables are soft and bubbling.
  5. Create wells in the mixture for the eggs and crack one egg into each well.
  6. Return to the oven and bake for an additional 10 minutes until the whites are set but yolks remain runny.
  7. Gently stir in chopped baby spinach before serving.
