  • 400g pasta (penne or rotini)
  • 1/3 cup olive oil
  • 500g cherry tomatoes
  • 100g mushrooms (sliced)
  • 1 cup baby spinach
  • 200g goat cheese
  • 5 garlic cloves (minced)
  • 2 tsp dried oregano
  • 1 tbsp balsamic vinegar
  • Fresh basil leaves (for garnish)
  • Chili flakes, kosher salt, and black pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In an oven-safe baking dish, combine cherry tomatoes, sliced mushrooms, and baby spinach. Drizzle with olive oil and balsamic vinegar; season with garlic, chili flakes, oregano, salt, and pepper.
  3. Place the goat cheese in the center of the veggies and drizzle with more olive oil.
  4. Bake for 20-30 minutes until tomatoes burst and cheese softens.
  5. Meanwhile, cook pasta in salted water until al dente; reserve some pasta water before draining.
  6. Mash the roasted goat cheese into the vegetables once out of the oven. Mix in the cooked pasta and reserved water for creaminess.
  7. Toss in fresh basil before serving.
