  • 4 bell peppers (red, yellow, or green)
  • 1 lb ground chicken
  • 1 cup cooked white rice
  • 8 oz frozen spinach (thawed and drained)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1½ cups mozzarella cheese (shredded)
  • ¼ cup feta cheese crumbles
  • 1 tbsp olive oil
  • 2 tsp oregano
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice bell peppers in half lengthwise and remove seeds. Arrange cut-side up in a casserole dish.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until fragrant and onions are translucent.
  4. Add ground chicken to the skillet; cook until browned and no longer pink. Season with salt, pepper, and oregano.
  5. In a mixing bowl, combine cooked chicken mixture, cooked rice, spinach, mozzarella cheese, and feta cheese.
  6. Generously stuff each pepper half with the filling mixture.
  7. Bake stuffed peppers for about 15 minutes until the cheese is bubbly and golden brown.
