Ingredients

Scale
  • 1 lb sirloin steak
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worcestershire sauce (soy-based alternative recommended)
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 4 ounces Gorgonzola cheese, crumbled
  • 6 cups mixed spring greens
  • 1 corn on the cob, grilled

Instructions

  1. Marinate the sirloin steak in a mixture of balsamic vinegar, Worcestershire sauce, olive oil, Dijon mustard, garlic powder, salt, and pepper for at least 30 minutes.
  2. While the steak marinates, prepare the gremolata by mixing minced basil, parsley, lemon zest, and garlic in a small bowl.
  3. Grill the corn until golden brown; cut kernels off the cob once cooled.
  4. Grill the marinated steak to desired doneness; let rest before slicing against the grain.
  5. In a large bowl, combine mixed greens, cherry tomatoes, red onion, Gorgonzola cheese, and grilled corn. Toss with remaining vinaigrette before serving.
  6. Top with sliced steak and garnish with gremolata.
