  • 1/2 cup sour cream
  • 1 large egg
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups powdered sugar (for icing)
  • 1 tsp vanilla extract
  • 1½ tbsp milk

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the sour cream, egg, and mashed bananas until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Spread the batter evenly in the prepared baking dish. Bake for 20–25 minutes or until golden brown and a toothpick inserted comes out clean.
  5. While the bars cool slightly, prepare the icing by browning additional butter in a saucepan until golden and fragrant. Mix in powdered sugar, vanilla extract, and milk until smooth.
  6. Spread the brown butter icing over the warm bars and allow them to cool completely before slicing.
