  • 3/4 cup chopped onion
  • 5 cloves garlic (minced)
  • 2 jalapeño peppers (minced)
  • 1/3 cup fresh basil leaves (chopped)
  • 2 tablespoons olive oil
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp ground turmeric
  • Cooked brown rice (or preferred grain) for serving

Instructions

  1. Combine spices in a small bowl: cumin, cinnamon, ground cloves, cardamom, black pepper, chili powder, salt, and turmeric.
  2. Coat chicken pieces with the spice mixture in a large bowl.
  3. In a large skillet over medium-high heat, add olive oil. Sauté chopped onions and minced jalapeños until onions are translucent (about 3 minutes). Add minced garlic and sauté for an additional minute.
  4. Add marinated chicken to the skillet. Cook until golden brown on both sides (about 5 minutes per side). Remove chicken from the skillet.
  5. Pour coconut milk into the skillet and bring to a gentle simmer. Stir occasionally until the sauce thickens (about 5-7 minutes).
  6. Return chicken and sautéed vegetables to the skillet; add fresh basil and ginger. Cook for an additional 2 minutes.
  7. Serve hot over cooked brown rice or your choice of grain.
