  • 3 tablespoons avocado oil
  • 2 cups BBQ sauce (divided)
  • 4 ears corn
  • 8 cups romaine lettuce
  • 1 cup black beans (drained and rinsed)
  • 16 ounces grape tomatoes (quartered)
  • 1 avocado (diced)
  • Fresh herbs (parsley, cilantro, dill)
  • 1 large egg
  • 1/2 cup unsweetened full-fat coconut milk
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 2 garlic cloves (minced)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Marinate chicken: Cut chicken breasts into cubes. In a bowl, mix avocado oil, salt, and half of the BBQ sauce. Coat chicken and refrigerate for at least 30 minutes.
  2. Prepare dressing: In a bowl or jar, whisk together coconut milk, lemon juice, vinegar, garlic, onion powder, salt, dill, and parsley until smooth.
  3. Grill corn: Husk corn and grill over medium heat for about 10 minutes until charred.
  4. Assemble salad: In a large bowl, layer romaine lettuce, black beans, corn kernels, grape tomatoes, and diced avocado. Add the remaining BBQ sauce.
  5. Cook chicken: Thread marinated chicken onto skewers and grill for 10-15 minutes until cooked through (internal temperature of 165°F). Let rest before serving.
