  • 2/3 cup teriyaki sauce

  • 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1 1/2-inch pieces)
  • 1 sweet onion (cut into 1 1/2-inch pieces)
  • 2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine barbecue sauce, teriyaki sauce, minced garlic, and grated ginger. Reserve half a cup of this marinade for later.
  2. Add cubed chicken to the marinade, ensuring each piece is well coated. Marinate for at least 30 minutes at room temperature or refrigerate overnight for best results.
  3. Preheat the grill to medium heat (350°F to 400°F).
  4. Thread marinated chicken, pineapple chunks, bell pepper pieces, and onion onto skewers, leaving space between ingredients.
