  • ½ cup peanut oil (or sesame/sunflower oil)
  • ½ cup chopped onion
  • ¼ cup rice apple vinegar (or regular rice vinegar)
  • ¼ cup water
  • 2 Tbsp fresh ginger, peeled and chopped
  • 2 Tbsp chopped celery
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp ketchup (or tomato paste)
  • 2 tsp sugar
  • 2 tsp fresh lemon juice
  • Pinch of salt & pepper to taste

Instructions

  1. Gather all ingredients and chop the onion, celery, and ginger.
  2. In a blender or food processor, combine peanut oil, chopped onion, rice apple vinegar, water, fresh ginger, celery, soy sauce, ketchup (or tomato paste), sugar, lemon juice, salt, and pepper.
  3. Blend until smooth for about 45 seconds to 1 minute.
  4. Transfer the dressing to an airtight container and refrigerate for at least one hour to allow flavors to meld.
  5. Shake well before serving over salads or using as a dip.
