  • 2 pounds boneless skinless chicken breasts
  • 1 ounce packet taco seasoning
  • 32 ounces chicken broth
  • 15-ounce can red enchilada sauce
  • 15-ounce can black beans, drained
  • 14.5-ounce can petite diced tomatoes
  • 10-ounce bag frozen corn, thawed
  • 2 (4 oz) cans mild diced green chiles
  • 1 large onion, diced
  • 34 garlic cloves, minced
  • 1 bay leaf
  • Fresh cilantro for garnish
  • Crispy tortilla strips for topping

Instructions

  1. Place chicken breasts at the bottom of the slow cooker. Season with taco seasoning.
  2. Pour in chicken broth and red enchilada sauce.
  3. Add black beans, diced tomatoes, corn, green chiles, onion, garlic, and bay leaf.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  5. Once cooked, shred the chicken using two forks and return to the soup.
