  • 3 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 2 cups fresh basil leaves, torn
  • 4 cups arugula
  • 1 ripe avocado, sliced
  • Toasted pumpkin seeds (optional)

Instructions

  1. In a high-speed blender, combine blackberries, balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme. Blend until smooth.
  2. Pour two-thirds of the dressing over the chicken in a large bowl or resealable bag; marinate for at least 30 minutes (up to overnight).
  3. Preheat the grill to medium heat. Grill marinated chicken for about 20–25 minutes or until it reaches an internal temperature of 165°F, flipping occasionally.
  4. While the chicken rests for 5 minutes, prepare the salad base by dividing arugula and basil among serving bowls.
