  • 1 cup granulated sugar (divided)
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) cold unsalted butter

  1. Preheat your oven to 375°F (190°C). Grease an 8-inch round cake pan.
  2. In a bowl, combine blackberries with ½ cup sugar and lime juice. Let sit for 15 minutes.
  3. In another bowl, whisk together remaining sugar, flour, and salt.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Press half of the shortbread mixture into the bottom of the greased pan.
  6. Spoon blackberry mixture evenly over the pressed base.
  7. Sprinkle remaining shortbread mixture over the berries.
  8. Bake for 30-35 minutes until golden brown and bubbly. Allow to cool before slicing.
