- 4–5 peaches, cored and cut into wedges
- 1 stick (8 tablespoons) unsalted butter, softened
- 1 1/4 cup sugar
- 3 large eggs
- 1 cup all-purpose flour
- 1/4 cup almond flour
- 1/4 cup water
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- Preheat your oven to 350°F (175°C). Line a non-springform cake pan with parchment paper and butter the sides.
- Arrange the peach wedges in the bottom of the pan and sprinkle with cinnamon.
- In a saucepan, combine 1/4 cup water with 1/2 cup sugar over medium heat until golden brown; pour over the peaches.
- In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla. In another bowl, whisk together dry ingredients: all-purpose flour, almond flour, baking powder, and remaining cinnamon.
- Gradually mix dry ingredients into the wet ingredients until just combined.
- Pour batter over peaches in the pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool for 15 minutes before flipping onto a serving plate.
