  • 45 peaches, cored and cut into wedges
  • 1 stick (8 tablespoons) unsalted butter, softened
  • 1 1/4 cup sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/4 cup water
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a non-springform cake pan with parchment paper and butter the sides.
  2. Arrange the peach wedges in the bottom of the pan and sprinkle with cinnamon.
  3. In a saucepan, combine 1/4 cup water with 1/2 cup sugar over medium heat until golden brown; pour over the peaches.
  4. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla. In another bowl, whisk together dry ingredients: all-purpose flour, almond flour, baking powder, and remaining cinnamon.
  6. Gradually mix dry ingredients into the wet ingredients until just combined.
  7. Pour batter over peaches in the pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool for 15 minutes before flipping onto a serving plate.
