  • 2 and 1/2 pounds fresh ripe peaches, pitted and sliced
  • 2 and 1/2 Tablespoons apple cider vinegar
  • 2 Tablespoons freshly squeezed orange juice
  • 1/2 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar (packed)
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons cornstarch
  • 1/2 cup unsalted butter, cut into cubes
  • 3/4 cup old-fashioned oats
  • 1/2 cup pecans, finely chopped
  • 2/3 cup all-purpose flour
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine peach slices, apple cider vinegar, orange juice, orange zest, vanilla extract, brown sugar, cinnamon, and cornstarch. Toss until well coated.
  3. Transfer the peach mixture to a baking dish.
  4. In another bowl, mix oats, chopped pecans, granulated sugar, brown sugar, flour, and butter until crumbly.
  5. Spread the oat topping over the peaches evenly.
  6. Bake for about 45 minutes until bubbly and golden brown.
  7. Let cool slightly before serving.
