  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup chilled water
  • 1 tbsp apple cider vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan over medium heat, melt the cold unsalted butter until golden brown; let cool slightly.
  3. In a large bowl, mix flour and fine sea salt. Add cooled brown butter and combine until crumbly.
  4. Gradually add chilled water mixed with apple cider vinegar until dough forms; chill for at least one hour.
  5. Prepare the fruit filling by combining sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, zest, and salt in a bowl.
  6. Roll out half of the chilled dough into a circle and place in a pie dish; fill with fruit mixture.
  7. Roll out the remaining dough for a lattice top or cover entirely; crimp edges to seal.
  8. Bake for about 45-55 minutes until golden brown and juices bubble.
