  • 1 Ciabatta or Baguette (fresh or toasted)
  • 56 Roma tomatoes (about 500g)
  • 2 large cloves garlic
  • 10 large fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F). Slice ciabatta or baguette into thick slices.
  2. Arrange the slices on a baking sheet and toast in the oven for about 5-8 minutes until golden brown.
  3. Meanwhile, wash and dice the tomatoes, then combine them in a bowl with crushed garlic (reserve half), torn basil leaves, salt, pepper, and 1 tablespoon of olive oil.
  4. Rub the cut side of the reserved garlic on the warm toasted bread and drizzle with additional olive oil.
  5. Generously spoon the tomato mixture onto each slice of bread and serve immediately.
