  • 6 Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup fresh basil leaves (chopped)
  • 5 garlic cloves (divided)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil (for the tomato mixture)
  • 3 Tbsp extra virgin olive oil (for toasting)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 baguette
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine diced tomatoes, chopped basil, three minced garlic cloves, balsamic vinegar, two tablespoons of olive oil, sea salt, and black pepper. Allow it to marinate for 10-15 minutes.
  3. Slice the baguette diagonally into 1/2-inch thick pieces and arrange on a baking sheet lined with parchment paper.
  4. Brush each slice with three tablespoons of olive oil and optionally rub with the remaining garlic clove.
  5. Bake for about 7 minutes or until golden brown.
  6. Remove from oven and sprinkle parmesan cheese over each slice; return to oven for another 2-3 minutes until melted.
  7. Top each toasted slice with the marinated tomato mixture and serve immediately.
