  • 1/4 cup packed light-brown sugar (for crumble topping)
  • dash of salt (for crumble topping)
  • 1/2 teaspoon cinnamon (for crumble topping)
  • 6 tablespoons chilled unsalted butter (for crumble topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, sugar, and salt for the crust. Cut in chilled butter until crumbly. Add ice water gradually until dough forms. Chill for at least 30 minutes.
  3. Roll out the dough into a pie dish and trim edges.
  4. Toss peach slices with cornstarch and cinnamon in another bowl.
  5. Layer half of peach filling in the crust; drizzle with caramel sauce; add remaining peaches.
