  • 3 tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1.5 cups marinara sauce
  • 1/4 cup freshly grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup torn fresh basil leaves
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice cauliflower into 1-inch thick planks and arrange on a rimmed baking sheet.
  3. Brush both sides with olive oil and season with salt and black pepper.
  4. Roast for about 35 minutes, flipping halfway until golden brown and tender.
  5. Spoon marinara sauce over each plank, then sprinkle with half the mozzarella and half the Parmesan.
  6. Broil for 3 minutes until cheese is bubbly and golden.
  7. Garnish with remaining Parmesan, torn basil, and optional crushed red pepper flakes before serving.
