  • ½ teaspoon kosher salt
  • ⅓ cup olive oil (or avocado oil)
  • ¼ cup apple cider vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic (finely minced)
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon ground pepper

Instructions

  1. Trim any excess fat from the skirt steak and pat it dry.
  2. Season both sides with kosher salt.
  3. In a bowl, whisk together olive oil, apple cider vinegar, soy sauce, Worcestershire sauce, Dijon mustard, minced garlic, thyme, rosemary, and ground pepper until well combined.
  4. Place the steak in a resealable bag and pour the marinade over it. Seal tightly, removing excess air to ensure full coverage. Marinate in the refrigerator for at least two hours or overnight for best flavor.
  5. Preheat your grill to high heat (500°F). Pat the steak dry again before grilling.
