  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 1 cup plain Greek yogurt (for tzatziki)
  • chopped romaine lettuce
  • halved cherry tomatoes
  • sliced cucumber
  • thinly sliced red onion
  • crumbled feta cheese

Instructions

  1. Prepare the tzatziki sauce by combining Greek yogurt, minced garlic, dried dill weed, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate for at least 30 minutes.
  2. Marinate the chicken by mixing olive oil, lemon juice, smoked paprika, cumin, salt, and other spices in a large bowl or ziplock bag. Add the chicken and coat evenly. Let it marinate for at least 1 hour.
  3. Preheat the grill to medium heat (375°F – 400°F). Grill the marinated chicken for about 4-6 minutes per side until it reaches an internal temperature of 165°F.
  4. Allow the chicken to rest for a few minutes before slicing it into strips.
  5. Warm pitas on the grill or in the oven wrapped in foil.
  6. Assemble gyros by layering sliced chicken in each pita with tzatziki sauce and your choice of toppings.
