  • 1/2 red onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 1/2 cup Italian dressing
  • 1/2 cup Parmesan cheese
  • 1/4 cup basil leaves
  • 8 oz rotini pasta
  • 1 lb chicken breast

Instructions

  1. Boil salted water in a large pot and cook the rotini until al dente, about 8–10 minutes. Drain and rinse under cold water.
  2. Season chicken breasts with salt and pepper. Grill on medium-high heat for about 6–8 minutes on each side until cooked through (165°F internal temperature). Allow to rest before slicing.
  3. Dice cucumbers, halve cherry tomatoes, and thinly slice red onion.
  4. In a small bowl, whisk together Italian dressing, Parmesan cheese, and chopped basil until creamy.
  5. In a large bowl, combine cooked pasta, sliced chicken, diced vegetables, and dressing. Toss gently to coat.
  6. Chill the salad for at least 30 minutes before serving.
