Ingredients

  • 1 head romaine lettuce, chopped
  • 15 oz black beans, drained
  • 15 oz black-eyed peas, drained
  • 1 cup frozen sweet corn, thawed and drained
  • 2 cups cherry tomatoes, halved
  • turkey bacon or baked chickpeas, chopped
  • cheddar cheese or vegan cheese, shredded
  • 1 avocado, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno, seeded and minced
  • 1/2 red onion, diced
  • 1 handful cilantro, chopped
  • 1 cup mayonnaise
  • 1/2 cup smoky BBQ sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lime juice

Instructions

  1. Rinse and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.
  2. Drain and rinse black beans and black-eyed peas; add to the bowl.
  3. Thaw and drain the corn; add it along with halved cherry tomatoes.
  4. If using turkey bacon or baked chickpeas, chop them into pieces and mix in.
  5. Add shredded cheddar cheese, diced avocado, chopped red bell pepper, minced jalapeno, diced red onion, and chopped cilantro.
  6. In another bowl, whisk together mayonnaise, BBQ sauce, Dijon mustard, and lime juice until smooth.
  7. Pour the dressing over the salad ingredients and gently toss to combine.
