- 1 head romaine lettuce, chopped
- 15 oz black beans, drained
- 15 oz black-eyed peas, drained
- 1 cup frozen sweet corn, thawed and drained
- 2 cups cherry tomatoes, halved
- turkey bacon or baked chickpeas, chopped
- cheddar cheese or vegan cheese, shredded
- 1 avocado, chopped
- 1 red bell pepper, chopped
- 1 jalapeno, seeded and minced
- 1/2 red onion, diced
- 1 handful cilantro, chopped
- 1 cup mayonnaise
- 1/2 cup smoky BBQ sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons lime juice
- Rinse and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.
- Drain and rinse black beans and black-eyed peas; add to the bowl.
- Thaw and drain the corn; add it along with halved cherry tomatoes.
- If using turkey bacon or baked chickpeas, chop them into pieces and mix in.
- Add shredded cheddar cheese, diced avocado, chopped red bell pepper, minced jalapeno, diced red onion, and chopped cilantro.
- In another bowl, whisk together mayonnaise, BBQ sauce, Dijon mustard, and lime juice until smooth.
- Pour the dressing over the salad ingredients and gently toss to combine.
