  • 1 ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon fresh grated nutmeg
  • ½ cup pecans, toasted
  • ½ cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tablespoons ice cold water
  • 8 oz mascarpone cheese, at room temperature
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream
  • 6 oz cranberries (fresh or frozen)
  • ⅓ cup packed light or dark brown sugar
  • ⅓ cup apple cider juice
  • Zest of 1 orange
  • A few grates of fresh nutmeg
  • 1 cinnamon stick

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the flour, granulated sugar, salt, nutmeg, and toasted pecans; pulse until finely ground.
  3. Add cold butter and pulse until crumbly. Mix in egg yolk and ice water until dough forms.
  4. Press the dough into a tart pan and chill for 30 minutes.
  5. Blind bake the crust for about 20 minutes until golden brown; let cool.
  6. In a bowl, mix mascarpone with sugar and vanilla until smooth. Fold in whipped cream gently.
  7. In a saucepan, cook cranberries with apple cider juice, brown sugar, orange zest, nutmeg, and cinnamon stick until syrupy.
  8. Layer the mascarpone filling into the cooled crust and top with spiced cranberries.
  9. Refrigerate for at least three hours before serving.
