1/2 cup fresh squeezed orange juice
1/4 cup fresh squeezed lemon juice
1 tablespoon unsweetened almond milk
3/4 cup extra virgin olive oil
1 tablespoon rice vinegar
1 tablespoon minced shallots
Pinch of salt
4 slices grilled pineapple
1 avocado (sliced)
1 corn on the cob (grilled)
1/2 cup pepitas
1 cup fresh blueberries
2–3 cups fresh mixed greens
Instructions
For the dressing, combine orange juice, lemon juice, almond milk, olive oil, rice vinegar, minced shallots, and salt in a mason jar or mixing bowl. Blend until smooth.
Preheat the grill to medium-high heat and lightly oil the grates. Grill pineapple slices for about 2 minutes per side until charred.
Grill corn on the cob for about 5 minutes per side until slightly charred; allow to cool before cutting kernels off.
In large bowls, layer mixed greens, grilled pineapple, corn kernels, pepitas, blueberries, and avocado slices.
Drizzle with creamy citrus dressing just before serving.
