  • 1/2 cup breadcrumbs
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine ground meat, onion, garlic, ginger, breadcrumbs, and egg. Mix until well blended.
  2. Form mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a skillet over medium-high heat. Add meatballs and cook until browned on all sides (about 3–4 minutes per side). Remove from skillet and set aside.
  4. In the same skillet, add garlic and ginger; sauté briefly until fragrant.
  5. Whisk in coconut milk and red curry paste until smooth. Bring to a simmer.
  6. Stir in soy sauce and lime juice; let simmer for about 5 minutes.
  7. Return meatballs to the skillet; gently coat them in the sauce. Simmer for an additional 10–15 minutes until cooked through.
  8. Garnish with fresh cilantro before serving.
