1 medium head green cabbage (about 2 lbs), cored and cut into wedges
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small yellow onion, finely chopped
4 cloves garlic, minced
½ cup heavy cream
½ cup freshly grated Parmesan cheese
1 teaspoon Cajun seasoning
Salt and freshly ground black pepper to taste
1 tablespoon chopped fresh parsley (plus more for garnish)
Instructions
Heat butter and olive oil in a large skillet over medium-high heat until shimmering. Add cabbage wedges flat side down; sear for about 3-4 minutes until golden brown. Flip and sear the other side for another 3 minutes. Remove from skillet.
Lower heat slightly and add chopped onions to the remaining oil in the skillet. Cook until softened and golden (about 5 minutes). Stir in minced garlic and Cajun seasoning; cook for another minute until fragrant.
Pour in heavy cream while scraping any browned bits from the skillet. Let simmer for 2-3 minutes until slightly thickened.
Stir in grated Parmesan cheese and parsley until melted and combined. Season with salt and pepper to taste.
Return cabbage wedges to the skillet, spooning sauce over them. Cover partially and cook for an additional 5 minutes, allowing the cabbage to steam slightly while keeping its crunch.
