  • 250 g pasta (fettuccine or linguine)
  • 30 g unsalted butter
  • 1 large shallot, finely chopped
  • 75 ml dry white grape juice
  • 200 ml crème fraîche
  • Juice of one lemon
  • 150 g frozen peas
  • 180 g hot smoked salmon, flaked
  • 2 tablespoons fresh dill, roughly chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente. Reserve some pasta water before draining.
  2. In a skillet, melt butter over medium heat and sauté shallots until translucent.
  3. Deglaze the pan with grape juice; simmer until nearly evaporated.
  4. Stir in crème fraîche and lemon juice until combined.
  5. Toss in cooked pasta along with reserved pasta water to achieve desired sauce consistency.
  6. Add blanched peas and flaked salmon gently, mixing well.
  7. Finish with fresh dill and season to taste.
