  • 1.5 pounds baby gold potatoes
  • 3 tablespoons unsalted butter (or plant-based butter)
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup grated parmesan cheese (or nutritional yeast)
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Boil the baby gold potatoes in salted water until fork-tender (about 15-20 minutes). Drain and let them dry.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Smash each potato to about ½ inch thick using a flat-bottomed glass or potato masher.
  4. In a small saucepan, melt the unsalted butter over low heat and add minced garlic, cooking until fragrant (1-2 minutes).
  5. Brush the garlic butter mixture over each smashed potato, then drizzle with olive oil and sprinkle with salt, black pepper, and half of the parmesan cheese.
  6. Roast in the oven for 20-25 minutes until golden brown, adding remaining parmesan for the last five minutes.
  7. Sprinkle with fresh parsley before serving.
