  • ¼ cup soy sauce
  • ¼ cup sugar
  • 3 tablespoons water
  • ½ teaspoon ground ginger
  • 2 tablespoons garlic, minced

Instructions

  1. Cut chicken thighs into 1-inch pieces and season with salt and black pepper.
  2. In a bowl, combine flour, cornstarch, and additional seasoning. Dredge chicken pieces in the mixture.
  3. Heat oil in a deep frying pan or wok until it reaches about 350°F (175°C).
  4. Fry chicken in batches for 4-5 minutes until golden brown; drain on paper towels.
  5. Fry jalapeño rings for about 30 seconds until crispy; set aside on paper towels.
  6. In a saucepan, combine soy sauce, sugar, water, ground ginger, and minced garlic over medium heat. Bring to a gentle boil while whisking until thickened.
  7. Toss fried chicken in the sauce until well-coated; serve topped with crispy jalapeños.
